Putting our Liberty Pole twist on this classic Scotch cocktail, our Penicillin cocktail is a perfect mix of ginger, honey, lemon juice, and Peated Bourbon. It requires a little prep work to make the honey-ginger simple syrup, but provides incredible balance to the cocktail. Also, the type of honey makes a big difference. We prefer our local friend, Bedillion Honey Farm. Enjoy!
2 oz. Liberty Pole Spirits Peated Bourbon
1.5 oz. Honey-Ginger Simple Syrup*
0.5 oz. Fresh Squeezed Lemon Juice
Shake all ingredients over ice and strain onto large ice cube. Garnish with candied ginger slices.
*To make the honey-ginger simple syrup, bring 16 oz. Bedillion Basswood Honey, 12 oz. water, and 4 inches of pealed/diced ginger to a simmer. Turn off heat and let cool over night. Strain in the morning and refrigerate until ready to use.
