You can tell there's a leprechaun in the glass because there's gold around the rim. Apparently Leprechauns like smoky bourbon.
Ingredients
2 oz. Peated Bourbon
1 oz. Carrot Juice
1/2 oz. brown sugar simple syrup
1/4 oz. lemon juice
1/4 oz. malic acid
Shake on ice and pour into your most expensive and gaudy goblet. Add ice.
Garnish with a carrot shaving that you've wrapped around a spoon handle to make it curl.
We were heavy on the brown sugar in the simple syrup.
Brown Sugar Simple Syrup
1 cup brown sugar
1/2 cup water
Heat long enough to dissolve the sugar.
A note about the carrot juice. If you have a juicer, you can juice your own. Add a small slice of ginger root to the juicer to brighten the taste. We, however, used R. W. Knudsen's Organic Carrot Juice with ginger and turmeric. It tastes exactly like a fresh juiced carrot.
